A must-try! Our lightest roasted coffee at the moment, is a Tirra Honey Process coffee from Tarrazú, Costa Rica. Tarrazú is the 5th canton in the province of San José in Costa Rica.

This coffee comes from a small farm totaling 2 hectares. The Tarrazu region is nestled in the heart of Costa Rica, and produces some of the best coffees with a fine acidity and excellent aroma. 

This coffee is honey processed which means the skin and pulp are removed from the coffee cherries during the drying process, but some of the 'honey' mucilage is left on the the seed. In the short amount of time it takes for the mucilage to dry out, a little fermenting occurs, making coffees processed in this way have significantly less acidity than Washed or Natural/Dried-in-the-Fruit coffees.
